Chocolate Peanut Butter Cookies
Recipe adapted from Better Homes & Gardens

If you want to make grown adults smile and squeal with glee, make a batch of these cookies for them. They are the perfect cookie; a little crispy on the outside and soft on the inside. And, um, hello, chocolate and peanut butter! My changes to this cookie recipe were the addition a little salt and cinnamon. A little touch of cinnamon took these cookies from fabulous to outstanding. Enjoy!
Makes: 32 cookies

Ingredients:
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup peanut butter
1 egg
1 tablespoon milk
1 teaspoon vanilla
3/4 cup sifted powdered sugar
1/2 cup peanut butter
2 tablespoons course sugar

Directions:
1. Preheat oven to 350 degree F. In a medium mixing bowl stir together flour, cocoa powder, cinnamon, salt and baking soda; set aside.

2. In a large mixing bowl beat together butter, the 1/2 cup granulated sugar, brown sugar, and the 1/4 cup peanut butter with an electric mixer until combined. Add egg, milk, and vanilla; beat well. Beat in as much of the dry ingredients as you can with mixer. Stir in remaining dry ingredients by hand with a wooden spoon. Form chocolate dough into 32 balls about 1-1/4 inches in diameter. Set aside.

3. For peanut butter filling, in a medium mixing bowl combine powdered sugar and the remaining 1/2 cup peanut butter until smooth. Shape mixture into 32 (3/4-inch) balls.

4. On a work surface, slightly flatten a chocolate dough ball and top with a peanut butter ball. Shape the chocolate dough over the peanut butter filling, completely covering the filling. Roll dough into a ball. Repeat with the remaining chocolate dough and peanut butter filling balls.

5. Place balls 2 inches apart on an ungreased cookie sheet. Lightly flatten with the bottom of a glass dipped in the 2 tablespoons granulated sugar.

6. Bake cookies in preheated oven for 8 minutes or until they're just set and surface is slightly cracked. Let cookies stand for 1 minute. Transfer cookies to wire racks; cool.

To Store: Place in layers separated by waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.

uhmmm you did not even use the cinnamon or the butter? anyway yeah they were delicious! so i just added those two ingredients into the mixture..

Pilar, I did include the butter in the recipe. It was creamed with the sugars. I did however forget to include the cinnamon in the first step. Thank you for pointing it out and I'm glad you enjoyed them.

These cookies were AMAZING!! A HUGE hit in my house. They took a while, but they were more than worth it. I suggest doubling the recipe though, because I doubled and came out with around 40 cookies (though I admit to many samplings of the dough). I also suggest a little more peanut butter filling, since I had the perfect amount for my cookies after making four of them peanut butter-less for my picky little brother. I'm making these again as soon as they run out!

These cookies were fantastic!! Me and my roommate made them tonight and found them amazing... had to make some extra peanut butter filling for all the cookies though!

If you chill the peanut butter mixture in the freezer for 10 or more minutes, then make the small balls, it is much less messy to make those balls. Then Chill the balls for about 10 minutes and then add the cookie dough around them. Much easier. Let them sit long enough for the peanut butter center to thaw before baking so the 8 minutes still works.
